We love a whisky — it’s definitely our favourite drink — so it’s been a dream since opening the distillery to make a sheep whey spirit as close to one as possible.
This isn’t a whisky, but it’s been distilled and aged exactly like an Australian one would be. In fact, the only difference here is that our spirit uses sheep whey instead of rye or barley and, quite frankly, it’s an absolute belter. Double-distilled through our pot stills and aged in French oak sherry casks for four years, we’ve got a wonderfully-rich mapley aroma with dried fruit and a touch of toffee on the tongue. Tasty, warm and another world-first. One batch released every 4 years.
